Ingredients
1/2 cup all-purpose flour
1/2 cup old fashioned oats
1/8 cup shredded sweetened coconut
1 tsp. baking powder
1/4 cup brown sugar
1 tsp. vanilla extract
1/2 cup unsweetened chocolate almond milk
1 tbsp. semi-sweet chocolate chips
Directions
Preheat oven to 350 degrees F and combine dry ingredients (minus the chocolate chips) in a large bowl. Mix wet ingredients in a separate, smaller bowl. Combine wet ingredients with dry ingredients and stir in those chocolate chips! Separate the “dough” into 9 even servings and spread out onto a baking sheet. I used a silicone mat as my non-stick surface. Bake at 350* for 12-15 minutes, or until edges of the cookie are golden brown. Place cookies on a wire rack and let cool for at least 5 minutes before eating.
Makes 9 medium sized cookies.
