Banana Yogurt Muffins Monday, Sep 15 2008 

Ingredients
1 1/4 c oatmeal
1/2 c rice flour
1/4 c ground flaxseed
1 tsp baking powder
1 tsp baking soda
2 eggs, beaten
1/4 c plain yogurt
3 medium, ripe bananas, mashed
1/2 c agave syrup
1/3 c grapeseed oil
1/4 c walnut pieces

Directions

Preheat oven to 375°F. In a large bowl, whisk together oatmeal, flour, flaxseed, baking powder, and baking soda. In a separate bowl, combine eggs, yogurt, bananas, syrup, and oil. Add flour mixture and fold in walnuts. Divide batter into paper-lined muffin cups. Bake for 20 to 22 minutes or until tops spring back when lightly touched. Cool on a wire rack.

Best Ever Muffins Saturday, Sep 13 2008 

Ingredients

2 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
3/4 cup white sugar
1 egg
1 cup milk
1/4 cup vegetable oil

Directions

Preheat oven to 400 degrees F. Stir together the flour, baking powder, salt and sugar in a large bowl. Make a well in the center. In a small bowl or 2 cup measuring cup, beat egg with a fork. Stir in milk and oil. Pour all at once into the well in the flour mixture. Mix quickly and lightly with a fork until moistened, but do not beat. The batter will be lumpy. Pour the batter into paper lined muffin pan cups. Bake for 25 minutes, or until golden.

Variations
Blueberry Muffins: Add 1 cup fresh blueberries.
Raisin Muffins: Add 1 cup finely chopped raisins.
Date Muffins: Add 1 cup finely chopped dates.
Cheese Muffins: Fold in 1 cup grated sharp yellow cheese.

Applesauce Oatmeal Muffins Sunday, Jun 8 2008 

Ingredients

1 cup old fashion rolled oats (not instant)
1 cup non-fat milk
1 cup whole wheat flour
½ cup brown sugar
½ cup unsweetened applesauce
2 egg whites
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 teaspoon cinnamon
1 teaspoon ground cloves
1 teaspoon ground nutmeg

Directions

Soak the oats in milk for about one hour. Preheat the oven to 400 degrees. Spray muffin pan with cooking spray. Combine the oat mixture with the applesauce and egg whites, and mix until combined. In a separate bowl measure and whisk the dry ingredients together. Add wet ingredients to dry and mix until just combined. Do not over mix the batter or the muffins will be tough. Spoon muffin mixture into muffin pan. Top each muffin with a cinnamon/sugar mixture (one part cinnamon to one part sugar). Bake for 20-25 minutes or until done. Remove from pan, cool and enjoy.

Makes 12 muffins.
