Oatmeal Dump Cookies Saturday, Feb 7 2009 

Ingredients
2 1/2 cups oatmeal
2 smushed bananas
1/2 tsp salt
1 tsp cinnamon
1 cup white chocolate chips
1 cup coconut flakes
1/2 cup cocoa powder
2 tblsp peanut butter
1/2 cup organic applesauce, no sugar added

Directions
Mix together. Place in heaps on cookie sheet. Bake at 400 degrees for 8 minutes.

Overnight Oats Sunday, Sep 14 2008 

Ingredients

1/2 cup Old Fashioned Oats
1/2 cup water
1 (5.3 -6 oz) container Greek Yogurt

Directions

Pour oats and water into bowl, stir until blended well. Store in refrigerator overnight. In the morning add yogurt and mix until nice and thick.

Applesauce Oatmeal Muffins Sunday, Jun 8 2008 

Ingredients

1 cup old fashion rolled oats (not instant)
1 cup non-fat milk
1 cup whole wheat flour
½ cup brown sugar
½ cup unsweetened applesauce
2 egg whites
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 teaspoon cinnamon
1 teaspoon ground cloves
1 teaspoon ground nutmeg

Directions

Soak the oats in milk for about one hour. Preheat the oven to 400 degrees. Spray muffin pan with cooking spray. Combine the oat mixture with the applesauce and egg whites, and mix until combined. In a separate bowl measure and whisk the dry ingredients together. Add wet ingredients to dry and mix until just combined. Do not over mix the batter or the muffins will be tough. Spoon muffin mixture into muffin pan. Top each muffin with a cinnamon/sugar mixture (one part cinnamon to one part sugar). Bake for 20-25 minutes or until done. Remove from pan, cool and enjoy.

Makes 12 muffins.

Instant Oatmeal Cookie Sunday, Jun 8 2008 

Ingredients

1 (43 g) package quick-cooking oatmeal (your flavor choice)
1 tablespoon whole wheat flour
2 tablespoons unsweetened applesauce
1/4 teaspoon baking powder
1/8 teaspoon vanilla

Directions

Combine ingredients and spread onto a greased cookie sheet or pizza pan. Bake at 350 for 8 – 10 minutes.

Makes 1 cookie.
