Banana Cookies Saturday, Jan 24 2009

Ingredients
3 ripe bananas
2 cups rolled oats
1 cup dates, pitted and chopped
1/3 cup canola (or other veg) oil
1 tsp vanilla extract

Directions

Preheat oven to 350* F (175* C). In a large bowl, mash the bananas into a pulp. Stir in oats, dates, oil, and vanilla. Mix well, and allow to sit for 15 minutes. Using your hands, shape the mixture into cookies of desired shape and size. The “dough” will not rise or expand, but will come out exactly in the form you put them in. Place them on an un-oiled baking pan. Bake for 20 minutes in the preheated oven, or until lightly brown.

Ingredients

1/2 cup all-purpose flour
1/2 cup old fashioned oats
1/8 cup shredded sweetened coconut
1 tsp. baking powder
1/4 cup brown sugar
1 tsp. vanilla extract
1/2 cup unsweetened chocolate almond milk
1 tbsp. semi-sweet chocolate chips

Preheat oven to 350 degrees F and combine dry ingredients (minus the chocolate chips) in a large bowl. Mix wet ingredients in a separate, smaller bowl. Combine wet ingredients with dry ingredients and stir in those chocolate chips! Separate the “dough” into 9 even servings and spread out onto a baking sheet. I used a silicone mat as my non-stick surface. Bake at 350* for 12-15 minutes, or until edges of the cookie are golden brown. Place cookies on a wire rack and let cool for at least 5 minutes before eating.

Applesauce Oatmeal Muffins Sunday, Jun 8 2008

Ingredients

1 cup old fashion rolled oats (not instant)
1 cup non-fat milk
1 cup whole wheat flour
½ cup brown sugar
½ cup unsweetened applesauce
2 egg whites
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 teaspoon cinnamon
1 teaspoon ground cloves

Soak the oats in milk for about one hour. Preheat the oven to 400 degrees. Spray muffin pan with cooking spray. Combine the oat mixture with the applesauce and egg whites, and mix until combined. In a separate bowl measure and whisk the dry ingredients together. Add wet ingredients to dry and mix until just combined. Do not over mix the batter or the muffins will be tough. Spoon muffin mixture into muffin pan. Top each muffin with a cinnamon/sugar mixture (one part cinnamon to one part sugar). Bake for 20-25 minutes or until done. Remove from pan, cool and enjoy.

Makes 12 muffins.
