Bread Pudding Sunday, Jun 8 2008 

Ingredients

2 cups of bread crumbs
1 quart scalded milk
1½ cup sugar
¼ cup melted butter
2 eggs slightly beaten
1 tsp vanilla

Directions

Preheat oven at 350 degrees and let milk cool in separate pan. Mix sugar, butter, eggs, and vanilla together and add cooled milk. Put bread crumbs in pan and cover in cinnamon and raisins. Pour sugar, butter, eggs, vanilla, and milk on top of bread, raisins and cinnamon. Cook for 1 hour.

Quick Pumpkin Pudding Sunday, Jun 8 2008 

Ingredients

1 package Vanilla Instant Pudding (1.5 oz box)
1 can (12 fl. oz.) Evaporated Lowfat 2% Milk or 1 cup of Skim Milk
1 can (15 oz) Libby’s 100% Pure Pumpkin
1 teaspoon pumpkin pie spice

Directions

Beat pudding mix and evaporated milk according to package directions in large bowl; refrigerate for 5 minutes. Add pumpkin and pumpkin pie spice; mix well. Spoon into dessert dishes. Refrigerate for 10 minutes or until ready to serve.

Makes 7 ½ cup servings.
